To make DoubleWood, David Stewart MBE takes whiskey that has spent at least 12 years in traditional whiskey casks, American oak casks from Spanish oak ex-Oloroso sherry for a further nine months.
The whiskey is then transferred to large oak vessels called "casks" for 3-4 months to allow the whiskeys in the individual casks to "marry".
