Syrah (also known as Shiraz) is one of the most prestigious and widely planted red grape varieties in the world, famous for producing full-bodied, dark red wines with a pronounced spicy character.

- Key regions:

  • Rhône Valley (France): Its historic and spiritual home, where mythical and iconic subregions such as Hermitage and Côte-Rôtie are located.
  • Australia: Where it was renamed Shiraz and became the national emblem, producing highly concentrated and spicy wines.
  • Spain: Introduced in the early 1980s, it has adapted magnificently to the warm regions of Castilla-La Mancha, Aragón, Murcia, and Valencia, where it is used in both single-varietal and blended wines.

Flavor profile: It stands out for its intense aromas of black fruits (blackberries, plums), black pepper, violets, chocolate, and smoky notes.

Climate influence: In moderate regions (such as northern Rhône, France), it produces elegant, fresh, and mineral wines. In warm climates (such as Australia or Spain), it becomes a more powerful, ripe, luscious wine with lower acidity.

Structure: It has a high tannin content and a deep purple color, with a power level somewhere between Merlot and Cabernet Sauvignon. It also has excellent aging potential in the bottle.

As a well-structured wine with distinctive tannins and a characteristic peppery touch, it requires dishes that can stand up to its power:

Intense meats and game: It is the perfect companion for lamb, wild boar, venison, or a good grilled ribeye steak. Its spicy profile complements wild flavors.

Dishes with herbs and spices: Dishes cooked with black pepper, thyme, or rosemary enhance the grape's natural aromas. It pairs wonderfully with traditional stews or smoky dishes.

International cuisine: It stands up very well to the complex and spicy flavors of Asian and Mexican cuisine, as well as Indian tandoori dishes.

Cheeses and Desserts: It pairs excellently with aged or semi-aged cheeses. For a surprising finish, try it with an ounce of bitter dark chocolate.
