The Bobal is a red grape variety originating from Spain, especially cultivated in the Valencian region of Utiel-Requena and the neighboring region of Manchuela.
Organoleptic profile: It produces wines with a vibrant acidity and a moderately lower alcohol content compared to other traditional Spanish red varieties.
Appearance and aroma: It offers a dark and intense cherry color with violet edges. It stands out for its aromas of ripe black and red fruits, accompanied by floral notes and spicy touches.
Ideal pairing: Being structured wines with a good presence of tannins, they pair perfectly with Iberian cured meats, grilled red meats, traditional stews, and creamy meat rice dishes.
The Bobal grape is the second most planted red grape variety in Spain (just behind Tempranillo), with about 80,000 hectares cultivated mainly in the southeast of the Iberian Peninsula.
Despite its great abundance, for decades it was a "forgotten grape," used almost entirely to add color to bulk wines. Today, thanks to work with old vineyards, it is experiencing a true enological renaissance.
- Natural resistance: It is a purely Mediterranean variety, extremely resistant to extreme droughts and adapted to very hot summers and cold winters. However, due to the thickness and density of its cluster, it is sensitive to diseases caused by excess moisture, such as downy mildew.
- Yield: It produces very large clusters (some can weigh several kilos). The secret of today's premium wines lies in limiting this yield by forcing the plant (especially the old vines over 40 years old) to produce fewer grapes but with much higher concentration and quality.
