Tasting notes

14 - 16ºC.

Description

Paxaro Tolo 2024 is the most personal and recognizable red wine from Eulogio Pomares, the Galician winemaker also known for his work at Zárate and Quinta do Estranxeiro. A project born in 2021 that has already become one of the most sought-after reds from the D.O. Ribeira Sacra.

Made with 100% Mencía grapes from the emblematic A Pena das Marías plot, a small estate of just 3 hectares planted in 1975 in the municipality of Amandi (Lugo), on the dizzying slopes of the Sil Canyons over soils of slate with schists and quartzites. Heroic viticulture, completely on slopes, where the harvest is entirely manual and the field work is artisanal.

The winemaking respects the expression of the terroir to the maximum: spontaneous fermentation with native yeasts in 4,000-liter French oak foudres, where the wine also remains during its 10 to 11-month aging. No fining or filtration. Production is limited to just 4,500-9,000 bottles per vintage.
